Quick and Easy 4th of July Recipes
July 4th holiday is here! So you want to do something fun and have friends over for a picnic/BBQ and you’re at a loss as to what you should serve; other than hot dogs and hamburgers. Well I just happen to have a few quick, easy and fun ideas to help you out.
Red, White and Blue Strawberries
Strawberries are in season and the ones I’ve tried lately are super sweet and perfect for summer. These red, white and blue strawberries are simple to make and the kids can even help. It take only 3 ingredients to make these. Strawberries, white chocolate and blue sugar/edible glitter. Melt the chocolate in the microwave, dip your strawberry in the chocolate and then in the sugar/glitter. Place them on wax paper let the chocolate harden and you are ready to serve a super cute, patriotic, fresh fruit that everyone will love.
Panko Breaded Fish Fillets
My honey went to the coast fishing and brought back fresh flounder, shrimp, trout, and even shark steaks. For something a little different and a little more health conscience this July 4th you could try baked or grilled fish. The way we prepared ours is to lightly brush the fillets with a thin layer of mayonnaise then roll them in Panko bread crumbs, then sprinkle with a little Parmesan cheese, top with lemon slices and bake until golden brown. The fish has a wonderful zingy taste and is light on the stomach. You don’t want anything really heavy in this Texas heat. You could also grill your fish outdoors if you would rather. Add a side of roasted corn and some cheesy cauliflower and you have a wonderful dinner.
This is a recipe that I found on Pinterest and just had to try. It was easy and they are super yummy. Yes, they do taste like a s’mores. You line a pan with graham cracker crumbs, then top with scoops of the s’mores cookie mixture. Bake for about 5 minutes then place a small square of a Hershey’s bar on top and place back in oven til cookies are slightly brown. They are really good warm and you could serve with a side of ice cream to make it even better. I’ve included a link to the actual recipe below.
