Baked Mac & Cheese – Shay’s Recipe of the Week
The holiday’s always bring out some great recipes but many are traditional or old family recipes that you just don’t mess with. Every Thanksgiving and Christmas I always fix my grandma’s mac & cheese and I’ve never changed anything from the way she used to make it. However, I found some different recipes on line that looked really good so I decided to make one and see if it’s as good as my grandma’s. Ingredients:
- 3 c. uncooked elbow macaroni
- 4 Tlbs. butter
- 4 Tlbs. flour
- 2-3 c. milk
- 4 oz grated cheddar cheese
- 4 oz grated Monterrey Jack cheese
- salt and pepper to taste
Preheat oven to 350 degrees.
Boil and drain your noodles.
In a pot melt your butter and add the flour to make a rue.
Add milk and thicken and add your salt and pepper.
Pull from heat and add in your cheeses and stir until melted and blended well.
Stir in your pasta.
Pour into your baking dish (I used an 8×8) sprinkle the top with a little grated cheese (I also added a little sprinkle of Paprika for color) and place in oven to bake. Bake at 350 for about 30 minutes or until bubbly.
I have to say this was pretty darn good, but it’s just not Grandma’s. I will make it again though, I do like the extra creaminess the white sauce adds.
