My boyfriend and I are currently on the Atkins diet so I've been scouring the web looking for recipes that are low or no-carb but still have great taste. I've tried a few and one of my favorites so far is a low-carb pizza made with cauliflower. It is surprisingly delicious. I was skeptical but this is a really great tasting pizza and you can dress it up with whatever toppings you want!

Ingredients

  • 1 cup of riced cauliflower
  • 1 c. shredded mozzarella
  • 1 egg beaten
  • 1/2 tsp. garlic salt
  • 1 tsp dried oregano (I used ground and only about 1/4 tsp)
  • Alfredo sauce or pizza sauce
  • More cheese to your liking
  • Toppings of your choice
  • (this makes a small pizza, adjust accordingly for larger pizza..I doubled the recipe to feed 3 people)

I wasn't sure what 'riced cauliflower' was but its simple. Cut the florets of cauliflower and place in a chopper/processor and pulse until it looks like grains of rice, be sure you don't over chop. Place the riced cauliflower in a bowl and microwave for about 8 minutes, no water needed.

Stir together cauliflower, egg, oregano and garlic salt. Place on a cookie sheet or in a cast iron skillet.

Bake crust for about 10-15 minutes at 450 degrees.

Add your toppings. I used Alfredo sauce, some grilled chicken, spinach and a mix of Provolone and mozzarella cheeses.

This was really, really good. When a teenager gets 3 slices and tells you can make it again anytime, then you know it's good. He even knew it had cauliflower in it too! I will, however, make the crust a little thicker next time and not pat it out so thin, but other than that it was wonderful.
