Aside from a few tried-and-true family recipes and the occasional six-pack of Chick-Fil-A nuggies, this Texan doesn't eat much meat. I know, I know…sacrilege around these parts of the US. But it’s how it is.

Obviously you can find veggie options at some of the chains. Starbucks has egg bites and a meatless breakfast sandwich. Jason’s and Chick-Fil-A have hearty salads. And there are restaurants a-plenty serving chips, guacamole, beans and salsa. Who can’t make a meal off of that?

But beyond the chains and the consistently scrumptious smorgasbord of Tex-Mex, some of the best veggies in the Big Country can be found at…

The Shed. Built from a catering business started in Wingate in 1989, The Shed now resides at 7925 Buffalo Gap Road. Try the Fresh Sauteed Green Beans, Bacon Ranch Potato Salad, Pinto Beans, Jalapeno Cilantro Slaw, Jalapeno Corn, and if it's in season, the buttered squash. Just writing this I feel my saliva glands activating.

Betty Rose's. I usually go for green beans, pinto beans, potato salad, buttered potatoes (what can I say, I’m a sucker for spuds), and the cooked cabbage. Yes, cabbage.

Vagabond. Sure, you could order one of their pizza pies. But you could just as easily make a meal off the Vagabond Salad, pimento cheese, and pickled cucumbers. It would seem I should call them simply ‘pickles’, right? But they’re not. They are pickled cucumbers and you’ll have to try them to see what I mean.

Copper Creek. The Chopped Salad with honey creole dressing is considered an entree at this establishment. For good reason.

Cork & Pig. This place has meat-free options in the starters, sides, and wood-fired pizza sections of the menu. The spaghetti squash is yummy.

Pizza By Design. I order the Garden Pizza, trade out the fungi for banana peppers, and devour.

Rock-n-Rollerz. Famous for its burgers, but should be equally as renowned for their fries and fried onion strings.

El Pugarcito. This local restaurant has two locations offering Tex-Mex and Salvadoran fare. Order pupusas and fried plantains.

Krua Thai. My go-to order is curry panang, chow mein, and deep-fried spring rolls. You'll have to specify veggies only.

Disclaimer: Several of these dishes have bits of bacon in them. I don’t know what to tell you. We’re in Texas, folks.
